Eyeballs (Meatballs) with Cheese & Marinara Sauce

I wanted a creepy Halloween dinner and one of my favorite things I made were eyeball meatballs with cheese and marinara. These were pretty easy, but I did a bunch of short-cutting this time. These just require some assembly. You can make all these from scratch, but I was in a pinch and didn’t have time. Regardless they were delicious.

If you’d rather go for something easier, use mozzarella balls instead of meatballs. Make sure to get the snacking cheese and not the pearls. The snacking cheese size is larger than the pearls, which are too small, and make for a better eyeball. This also omits the dipping in cheese sauce so they’re easier and faster to assemble. Try them out!

  • marinara sauce
  • white cheese sauce
  • Italian style meatballs (or mozzarella snacking cheese balls, omit cheese sauce)
  • sliced green olives for iris
  • whole pitted black olives for pupil
  • straw

In 3 separate pans, heat up the marinara, melt the cheese sauce, and heat up Italian style meatballs on medium high, browning each side. Once they’re fully heated remove from heat. Using a fork or toothpick, dip each meatball in the cheese sauce and carefully set aside.

To make the eye, place slices of the green olives onto the meatballs to make an iris. Take the straw and punch out small circles from the black olives to make the pupils. Place the pupil into the hole of the green olive slice. Repeat this with remaining meatballs. Serve in a shallow platter of marinara or with pasta. Enjoy!
